Here's a fun recipe handed down in my Family! Abelskivers!!!
This is a family favorite! My grandma, whose parents are from Denmark, used to make these for us, when we would come to visit.
Then my mom started making them, we would have them every year around Christmas/New Years time and any other time we could talk/beg her into making them!! Just the other day she made them and the whole batch was gone in seconds!
So when we got married, what did we receive??? A cast iron Abelskiver pan, so we could carry on the tradition. My kiddos thank her for it, because I think it may be their favorite now too!!
Here are the directions on how to make Abelskivers (A recipe handed down through my family from Denmark)
Ingredients:
3 eggs (separated)
2 cups of Flour
2 cups of Buttermilk
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. sugar
1/4 tsp. nutmeg
Directions:
Separate the egg whites from the egg yolks. Place the egg whites in one bowl and the egg yolks in another. Beat the egg whites until they are nice and fluffy forming a peak.
In another bowl, sift in flour, baking soda, baking powder, nutmeg and salt. Mix in the egg yolks, buttermilk and sugar. After mixing together, fold in the beaten egg whites.
Over Medium/High heat warm-up an abelsiver cast iron pan. Spray with cooking spray, or place little dabs of butter in each slot.
Scoop in enough batter into each slot so it is 3/4 full. Each pan and each stove is going to be different as to how long it is going to take to cook before turning and heat may need to be adjusted up or down. It is kind of a trial and error kind of thing when it comes to making the perfect abelskiver, because you want them to be done on the inside but not too done on the outside.
Take a tooth pick and use it to help turn your abelsiver to the other side. Cook until done. You may want to cut the first ones open to make sure they are done on the inside.
Top with butter and then either sugar, cinnamon sugar, or jam!
